Sushi Saito is a 10-seat counter on the first floor of Ark Hills South Tower in Roppongi. Chef Takashi Saito has held three Michelin stars since 2009, and the restaurant is widely considered one of the three best edomae sushi counters in Japan, alongside Sushi Yoshitake and Sushi Sugita.
About ¥40,000 for a 20-piece omakase. Lunch and dinner are the same experience. Closed Sunday and public holidays.

Expect to confirm the booking with the hotel when you book the room, and expect a meaningful gratuity. Two: a personal referral from an existing regular, who calls on your behalf.
